Miriam’s journey into hospitality began like many others — working in restaurants in Melbourne whilst completing a drama degree. The parallels between performance and service were clear, and it was during this time that she discovered a genuine love for wine and hospitality.

After graduating, she took on a restaurant management role at a wine-focused venue, which ultimately led her to London, where she spent nearly seven years immersed in the industry. She worked at The Quality Chophouse, followed by a formative tenure at St. JOHN, where she became Wine Operations and Training Manager.

At St. JOHN, Miriam gained broad exposure to the wine business — including import/export, purchasing, wholesale, retail and blending the St. JOHN label wines. However, her most rewarding responsibility was leading training across multiple bakery sites and two restaurants: Bread & Wine and the Michelin-starred flagship in Clerkenwell. 

In 2022, Miriam relocated to Brisbane, taking on the role of Head Sommelier at Bianca restaurant before acquiring Ok. Wines, an online wine retail business. She is also currently Head Sommelier at C’est Bon in Woolloongabba and was recently named a finalist in the 2025 Sommeliers Australia Education Scholarship.

Miriam continues to take delight in training and talking all things wine with her colleagues and friends alike.
