Born and raised in Belgium, Nicolas had a short career as a professional soccer player, before graduating in accounting in 2016. It was upon moving to Australia in  2017 that Nicolas first engaged in hospitality work, igniting his love for wine. Following a move to Paris in 2019, Nicolas found himself working in the fine dining restaurant scene selling iconic, heavy hitting wines including the likes of Mouton-Rothschild and Sassicaia. Nicolas attributes his time based in the ‘city of light’ to his appreciation of wine culture with access to iconic cellar doors, and classic wine regions.
Returning to Australia in 2020, Nicolas immersed himself in Sydney’s restaurant scene, and in 2022, he initiated his wines studies with Sydney Wine Academy. Nicolas was a recent participant and scholar of the prestigious 2025 Sommeliers Australia Education Scholarship. Currently he is in the final stages of completing the L4 – WSET Diploma in Wine. Nicolas is passionate about NSW wines, and looks to positively give back to the wine industry, in lieu of the opportunities it has afforded  him in his career.
